Confetti Ice Cream Cake

I´m obsessed with this cake, it´s not only beautiful but also very easy to make and an absolute delight to taste. Yum!

A few months ago my dearest friend Mali from Butter Love made me a recipe of the yummiest Confetti Cookies for my previous blog and since then, they become one of my favorite cookies ever.

To make this cake, you will first need to make a large Confetti Cookie.

1/2 cup butter (softened)
3/4 cup sugar
1 egg
2 tsp vanilla
1 1/2 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cream of tartar

Directions for the cookie:
Preheat the oven at 350ºF
Cream butter for a few seconds. Add sugar, egg and vanilla, keep beating. Add flour, baking powder, baking soda, and cream of tartar; and beat until all the ingredients are incorporated. Place the dough in a cookie sheet and bake until the edges of the cookie are slightly golden brown.

Directions for the cake:
While the cookie was still warm I crumbled it and press the crumb mixture onto the bottom of a large 12 inch pan or two 6 inch round pans to make mini cakes. After it cooled down, I poured the strawberry ice cream (you will need about 2 cups) into the pan and pressed it down with a spoon for a nice, smooth and compact layer. Covered the pan with foil or plastic wrap and let it freeze for a few hours before serving.

I decorated it with whipped cream and confetti sprinkles.
